Productive day in prep for tday. Wife & I had awesome stone crabs for dinner, plus some Spanish mackerel & @dogfishbeer @Mariobatali bone-in pork butts brined for 14 hours, sat in dry rub for 14 more, ready to go on smoker for 12 more. @Mariobatali @chefsymon the pork butts came out perfect. Two half hotel pans full of porky yumminess. Happy tday!
