Great looking aka gai which is red clams. I love this when it's real fresh like this I'm using this Wagyu shortrib from Hokkaido @ Roy's Tokyo. Started my prep last night Tsukumon ramen at ramen street at Tokyo station. Gotta visit ate at rokuninsha broth separate fr noodle
