Molokai Shrimp is the best, and whenever I visit Kaunakakai I pick up a bag from John Austin, proprietor of Keawa Nui Farm. My mom hates cleaning them, so I do the work of de-shelling, but it is so worth the feast we have after. I take the shells and make a shrimp broth, it is fantastic. The shrimp are popular among chefs, you can get them on David Paul's menu in Lahaina, and Roy's serves them too. They are antibiotic free. Hawaii has an Aquaculture Disease Prevention program, the only one in the U.S. This program tests for viruses that are common in farmed shrimp. I think this could be my New Years Resolution. Make and drink fresh squeezed local citrus daily. It was quick and simple on this old fashioned plastic manual juicer I got second hand. Push citrus over top, pour into glass, enjoy! Incredible flavors, nothing like pre made.
