Attempt #2 at no-knead bread, in mini casseroles. They're the size of dinner rolls #cookingathome #lazycook 

I got leery of using glassware at high temps, plus I just really wanted to try these out.

This time, I left the dough for 21 hours, lined the bottom with parchment paper and baked at the correct oven temp for 15 min covered and 10 min uncovered.

I was prepared for how wet it was but I still worked the dough more than I should have to divide it into 4 pieces. The bottoms didn't stick but the sides did. It's pretty good while it's fresh but not so good next day; the crust becomes really chewy. The larger loaf keeps better.

The ingredients are cheap and prep time and clean up are minimal so this recipe is good to experiment with.
