What I learned: drip about 3tbs of egg wash into the dredge - work it w your fingers. You'll get a lofted, craggy, texture-y chicken breading. NICE! Lay slowly into oil heated to 350°F in cast iron skillet. Voila. Lofted. Check. Craggy. Check.
