Lay slowly into oil heated to 350°F in cast iron skillet.
What I learned: drip about 3tbs of egg wash into the dredge - work it w your fingers. You'll get a lofted, craggy, texture-y chicken breading. NICE!

I learned that you can actually 'over-bacon' a sauce. I put Bojangles spice, maple syrup, crumbled bacon *and* bacon fat in the mayo base. Do over would be: maple sugar and no bacon fat. It was wayyy
